Since decades, the name Falkenstein stands for an international team of specialists, which develops and executes economical and practical solutions for construction projects of all sizes for different clients in the meat industry.
Meat industry projects are highly complex and require a high degree of planning. Technical know-how, engineering skills and experience are required, since the structure will only become a functional unit through the interplay of a multitude of different installations - these include not only the supply of raw material but among others also water disposal, refrigeration technology, transport- and conveyor equipment and a number of other diverse machanical installations.
Slaughtering / Cutting
The creation of short ways, an optimal extensibility of the plant, operation processes without crossing and contamination and the ensuring of continious cold chains play a decisive role during the planning process of a meat business. Slaughtering robots and cutting machines are used more and more. Processes shall be productive, ergonomically and hygienically implemented and solutions must be found from the moment of slaughter until dispatch of the finished product.
Production Plants for the preparation of cooked, boiled and raw sausages are realized both, for small trade business and industrial sausage production. Ultramodern and fully automated processing lines for sausage meat and highly effective line production, assure a just-in-time production of goods. Apart from linearly organized processing lines, efficient and process reliable machines, as well as the installation of innovative and energy-efficient building services are of importance.
Convenience / Ready Meals
Besides the various warehouse technologies, the largescale cooking facilities, filling lines and packaging areas are of highest functional signifiance. Different production philosophies such as warm - and/or cold filling as well as cook & chill or cook & freeze form the wide range of different production methods. A vital role - within the current developments - is taken by the extension of shelf life while maintaining the flavor.
With its well based knowledge of the meat industry, the FALKENSTEIN architects and engineers, develop a holistic solution adapted to the product. The complex projects require both creative ability and mastery of the technical and constructive requirements. In the planning stage it is important to consider that all entities have to be linked in a way that the distances in between them are small and the supply and disposal needs to be guaranteed. Our services include site inspection, coordinated general planning, site management and start-up of the projects.
For many years we have been working together successfully as interdisciplinary projects teams on our internationally networked offices, using the internet, CAD and electric data processing. Our assignments are complex and include architecture, interior works, outdoor facilities, but also the technical equipments, installations, supply and disposal plants as well as purification of exhaust air and waste water facilities.
To meet hygienical standards, the appropriate regulations of e.g. the EU, BRC and IFS are to taken into consideration consequently. Further quality criteria are established beyond the hygiene guidelines to assure certified operational management. These requirements are implemented reasonably and with quality assurance, relying on our technical competence and many years of experience.
