Kinry primary product are Biobond Transglutaminase (TG). Transglutaminase is a natural enzyme that catalyze the formation of covalent bonds between the amino acid residues Lysine and Glutamine in proteins.
Biobond Transglutamise are widely used and applied in many foods system which contain proteins. After crosslinking of proteins, it can improve the physical properties of food. e.g. textural properties like firmness and elasticity.
Biobond Transglutaminase has a relatively wide range of application conditions:
pH range 4-9, Optimal pH value 6-7
Temperature range 0-65C, optimal temperature 50-55C
Another product are KinGard, our natural preservative series. Produced from natural and GRAS fermentation origin, it can be used in wide variety of products as well as in organic food products.
